Refrigerated Transport from Turkey: Cold Chain Guide
Refrigerated transport from Turkey for importers of fresh produce: how the cold chain works, temperature ranges by product, reefer trucks and containers, ATP certificate and the most common mistakes.
Refrigerated transport from Turkey is the carriage of temperature-sensitive goods in reefer trucks or reefer containers, kept within a set temperature range from loading to delivery without breaking the cold chain. Fresh fruit and vegetables, meat, dairy, frozen food, cut flowers and some pharmaceuticals travel this way. The principle is simple: the product stays at its target temperature from the packing house to your ramp, and that is recorded.
In a region like Antalya, where most exports are greenhouse produce, refrigerated transport sits at the centre of logistics. If you import fresh produce from Turkey, this guide explains how a cold chain shipment is planned, the vehicle types, temperature ranges by product, the documents involved and the mistakes that most often cost a load its shelf life.
What the cold chain is and why it must not break
The cold chain means keeping the temperature under control at every stage between production and the consumer: packing, storage, loading, transport and unloading. If one link fails, the product may look sound but its shelf life shortens, the microbial load rises and the receiver can reject the goods.
Responsibility therefore does not sit with the truck alone. The grower's pre-cooling, the warehouse temperature and the time the receiver keeps the vehicle at the ramp are all links in the chain, and they need to be combined in a single plan.
Reefer trucks, containers and vehicle types
The equipment used in refrigerated transport from Turkey depends on the mode and the distance:
- Reefer trailer: the standard road solution, about 13.6 m long with room for 33 euro pallets, available as single-temperature or multi-temperature units.
- Reefer rigid trucks and vans: for urban distribution and small lots.
- Reefer container: a refrigerated 20' or 40' container for sea transport, powered on the vessel and at the port; the choice for long-haul food exports.
- Refrigerated rail wagons: used on a limited number of routes.
When choosing a vehicle, check the capacity of the cooling unit, the condition of the trailer insulation and that the temperature recorder works. A trailer with worn insulation may not hold the target temperature in summer; in winter some products need the heating function instead.
Insulated, refrigerated and mechanically refrigerated vehicles
Not every insulated trailer is a reefer. An insulated vehicle only slows heat exchange and offers limited protection for pre-cooled goods over short distances. A refrigerated vehicle uses a cold source such as dry ice or eutectic plates. A mechanically refrigerated vehicle keeps the trailer at the set temperature throughout the journey with its own cooling unit; this is the equipment meant in international food exports.
Temperature ranges by product
Every product has its own carriage temperature, and a wrong setting is the most common cause of damage. The table shows general ranges; values vary with variety, ripeness and the buyer's specification.
| Product group | Approximate temperature | Watch point |
|---|---|---|
| Cherries, strawberries, grapes | 0-2°C | Fast pre-cooling, high humidity |
| Citrus | 3-7°C | Depends on variety |
| Tomatoes | 10-13°C | Sensitive to chilling injury |
| Peppers, cucumbers | 7-12°C | Soften at low temperature |
| Bananas | 13-14°C | Ethylene control needed |
| Fresh meat, dairy | 0-4°C | Low tolerance to deviation |
| Frozen food | -18°C and below | Thawing must be prevented |
| Cut flowers | 2-5°C | Sensitive to ethylene and vibration |
If products with different temperature needs must travel together, a multi-temperature reefer trailer is used; otherwise the product groups are planned in separate vehicles. Ethylene-producing goods (bananas, tomatoes) should not share a compartment with ethylene-sensitive ones (cut flowers, cucumbers).
Step-by-step planning of a reefer shipment
- Define the product: product name, target temperature, humidity expectation, packaging and shelf life are passed to the carrier.
- Pre-cool: the product is brought down to target temperature at the packing house before loading. A reefer is designed to hold temperature, not to cool warm produce.
- Prepare the vehicle: the trailer is cleaned, checked for odours and pre-set to the target temperature.
- Stow correctly: pallets are kept off the walls, an air gap is left under the roof and the air channels stay open.
- Start the recorder: the temperature logger is switched on before loading and its record is handed to the receiver on delivery.
- Limit door openings: at borders and checkpoints the doors are closed again as quickly as possible.
- Coordinate delivery: the receiver's ramp slot is booked in advance; a truck waiting at the gate burns fuel and cooling time.
ATP certificate, temperature records and documents
ATP is the international agreement on the carriage of perishable foodstuffs. Reefer vehicles carrying food to countries party to the agreement are expected to hold an ATP certificate of compliance, which certifies the insulation and cooling performance of the vehicle. Buyers may also ask for the temperature record kept during the journey.
Records are kept in two ways: a recorder fitted to the trailer and portable data loggers placed in the load. Satellite-linked systems allow live monitoring, so the driver and the operations team are alerted to a deviation while there is still time to act. Ask the receiver before departure which record they accept.
In addition to the standard export documents, fresh produce needs a phytosanitary certificate and animal products a veterinary health certificate; analysis reports may be requested for some product groups. The export declaration is filed in Turkey by a licensed customs broker, which your Turkish supplier or forwarder normally arranges. These requirements should be confirmed against current regulations and destination-country rules.
Because spoilage caused by a temperature deviation can exceed the carrier's liability limits under the CMR convention, cargo insurance covering the real value of the goods is important alongside the carrier's own cover.
Refrigerated transport from Turkey: the Russia and Europe lanes
Antalya's exports are led by tomatoes, peppers, cucumbers, citrus and cut flowers, all of which need reefer vehicles. Produce from the greenhouse districts is pre-cooled at the packing house and loaded onto a reefer truck the same day. If you are sourcing there, our guide to choosing a logistics company in Antalya lists what to check on the local side.
The busiest reefer lane is Russia: a reefer truck from Antalya reaches Moscow via Georgia in roughly 10-11 days, and the route, border points and documents are described in our article on freight from Turkey to Russia. On the European side, reefer trucks cross at Kapıkule and usually reach Germany in 4-6 days; see our guide to road freight from Turkey to Germany for the route and delivery points.
The most common mistakes
- Loading warm produce straight into the reefer and skipping pre-cooling
- Mixing products with different temperature needs in a single-compartment vehicle
- Tight stowage that blocks the air channels
- Starting the recorder after loading
- Dispatching the truck without a booked ramp slot at the receiver
Regulations and border procedures change over time; confirm the current requirements with the Turkish Ministry of Transport and Infrastructure and with your forwarder before you book.
Frequently asked questions
Which products need refrigerated transport from Turkey?
Fresh fruit and vegetables, meat and dairy, frozen food, cut flowers and some pharmaceuticals and chemicals must travel temperature-controlled. The range on the product label or in the buyer's specification is decisive.
Why does reefer transport cost more?
The cooling unit uses extra fuel, the equipment is more expensive and demand peaks in season. The rate depends on season, fuel and currency.
Is an ATP certificate mandatory?
Between countries party to the ATP agreement, a certificate of compliance is expected for vehicles carrying perishable food. The requirement for a given product and route should be checked against the current rules.
What is the temperature record for?
It documents the temperature inside the trailer throughout the journey. If quality is disputed on arrival it serves as evidence for both carrier and shipper, and in an insurance claim it helps show at which stage the damage occurred.
